Is it possible to get a good job (starting salary: 70K, with growth to 180K+?

If I have a 3.9 GPA in a bachelors in Psychology with a minor in Economics.
Would I need internships?
What kinds of jobs are out there for this major/minor path?

You can not even dream about a six figure salary without a masters and a very solid internship. If you have a 3.9, you are at the top of the list for a solid internship - which is crucial, and political. Kiss massive butt in your master's, and get pretty much whatever you want. That's the way to a six figure salary.

No. This is a pretty generic mix of knowledge that many people have and has no specific value in the market - you can't call yourself either a psychologist or a economist with just a BA in either. You will need something beyond that - either graduate study to teach/do research or professional schools such as law or business or something else that has some particular value in the job market. It's been decades since a generic BA is enough - my 80 year old parents were fast tracked to management with a liberal arts BA, because only about 10% of the population got one. Nowadays, its hardly a special designation.

No chance. You need a PhD in psychology to make that sort of money.

A bachelors in psych is worthless. It is the number one most popular bachelor degree and there are so many grads for few jobs that your chances of a good living with it are net to nil.

Unless you plan to get a PhD, you need to look at something else.

I have doubts that a bachelors in Psychology can earn you that much money, the only remote connection of those 2 degrees that comes to mind is working in advertising where buyer psychology is examined, one would probably need a marketing and perhaps writing degree as well for that industry.

Doubtful that you will get a starting salary that high. Also to obtain your top $ goal you will have to have a lot of work experience and be considered an expert in your field.(most do not achieve that) Good Luck
